Summary for the first story: Jim works as a bartender and solves advanced mathematical problems on the side until Spock bullies him into Starfleet.

Everyone who's following the NuTrek fandom has probably read this series already, but I'm going to rec it anyway (and hopefully recruit new fans to the fandom) because it is truly awesome.

Each story in this series can be read individually, although they are much better if you read them in their entirety in the order given. While Jim/Spock is the main pairing, most stories actually feature a secondary character that we never got to learn much about from the movie. My favourites are the ones featuring Winona (insightful and touching), Frank Hallie (the stepfather whose car Jim drove over the cliff; a very interesting perspective to have), and Amanda (told from Sarek's perspective, which nearly broke my heart).

The character study stories are written in the style of short segments of snapshots, which I really enjoyed but understand that they might not suit someone who prefers a more traditional storytelling style. I'm sure not everyone is going to like every one of the stories (or even most of them), but I urge you to give at least a couple of them a try -- and you may discover something to fall in love with (e.g. a Scotty who makes a fortune by selling his homebrew moonshine when Jim or Spock or both go batshit crazy). Highly recommended.
